Ingredients
for syrup:
100ml water
200ml sugar
1 cinammon stick
1 tbsp honey
for Cheesecake base:
200gr cookies
150 gr walnuts
1 tsp cinnamon
½ tsp clove powder
2 tbsp brown sugar
180 ml melted butter
for filling:
1000gr cream cheese
300gr sugar
1 tbsp vanilla extract
200gr heavy cream
4 eggs
50 gr all purpose flour
for Baklava:
1 package phyllo dough sheets
200ml melted butter
150 gr walnuts
1 tsp cinnamon
½ tsp clove powder
2 tbsp brown sugar
How to make Βaklava cheesecake
For syrup:
In a pot add 200Gr sugar 100 ml water 1 cinnamon stick bring to a boil
Remove Pot from fire add 1 tablespoon of honey and let it cool completely.
For cheesecake base:
In a food processor add 200gr cookies and beat until finely ground, transferred a mini Bowl add
150gr Walnut 1 teaspoon cinnamon 1/2 teaspoon clove powder 2 tbsp brown sugar and beat until coαrsly chopped
Transfer them into the bowl with the cookies add 180 ml melted butter combine all the ingredients
together spread it evenly and make it go combact.
Refrigerate for 50 minutes while preparing the feeling
For Cream
In a large bowl add 1000 gr cream cheese 300 gr sugar 1 tbsp vanilla extract and mix well.
Add 200 ml cold heavy cream and mix well , add 4 eggs and mix again. Add 50 gr of all-purpose flour and mix well
Remove the crust from the refrigerator and spread the cream filling evenly over it .
Put tha springform pan into the second larger baking pans at add hot water
Bake in a preheated oven at 180c for 45 minutes then lower at 150c for 25 minutes.
After refrigarate overnight
For baklava:
In a food processor add 150 gr walnuts 1 tsp cinnamon 1/2 tsp clove powder, 2 tbsp brown
sugar and chop coarsely.
Use the base of a second springform pan as guide to cut the phyllo dough sheets.
You need 16 – 18 phyllo dough sheets you also need 200 mL melted butter
Brush butter in the base of the form lined with parchement paper repeat the process:
Phyllo sheet-butter-phyllo sheet-butter after 4 phyllo sheets sprinkle some of the Walnut
mixture.
Add the fifth plyllo sheet some butter add sixth phyllo sheet , drizzle butter then
sprinkle some of the Walnut mixture.
Cut in 8 equal portions and use the remaining butter
Βake in a preheated oven at 180 c for 25 until 30 minutes
Pour the cold syrup into the hot baklava and let to absord it overnight.
Before serving put the Baklava on the top of the cheesecake. Garnish with some Walnut halves if you want
